Open-world RPGs have grown increasingly comfortable with letting players build characters however they want, and that's great if it fits with what the game is going for. There is, however, a real difference between a flexible skill system and having a great multi-class system, and that's where the games on this list come in. Each one contains a truly bespoke class system, designed to bend, merge, or bounce between those classes until the labels barely apply, or are altogether different. That, to my mind, is a much harder trick to pull off than any wide-open skill tree might allow for.
